Serves 4 people

A simple but yummy winter warmer.

Ingredients

500g beef mince

225ml vegetable/chicken/beef stock (a stock cube is fine)

1 onion

1 clove of garlic

1 ½ tbsp of olive oil

1 tsp chilli powder

1 tsp cumin

1 can kidney beans, (400g)

1 can tomatoes (400g)

1 tbsp tomato puree

1tsp brown sugar

½ tsp dried mixed herbs

Salt and Pepper

Method

  1. Finely chop the onion and the garlic.
  2. Heat the oil in the pan and sauté the garlic and onion until soft.
  3. Add the beef and cook for 10 minutes until brown.
  4. Add the chilli powder, cumin, and mixed herbs. Mix well.
  5. Pour in the kidney beans, tomatoes, and vegetable stock.
  6. Bring to the boil, then reduce the heat.
  7. You can eat it after 15 minutes, but the longer you leave it, the more flavoursome it will be!

Accompany with: Rice, sour cream, grated cheese, and fresh coriander.
